Went to Eunice for Mardi Gras for 18-9 years. Met & talked to him nearly every year. Bought his CD one year. He was such a nice person & in my opinion had the BEST Cajun voice for all the songs he sang. RIP Mr. Fontenot

Chicken Atchafalaya and Smoked Guru Chicken Salad Summertime is grilling time, but in South Louisiana the heat can sometimes be a bit too much to stand in front of a fire. Chicken Atchafalaya let’s the grill do all the heavy lifting without you standing in front of it the whole time. Smoked Guru Chicken Salad is a cool and refreshing bonus for the day after. Chicken Atchafalaya Ingredients: 4 lbs Chicken thighs (boneless, skinless) 2 cups Pecan halves 2 tablespoons Neutral oil ½ cup Pecan oil ¼ cup Steens Cane Vinegar 3 tablespoons Steens Cane Syrup 1 medium White onion (chopped) 4 cloves Garlic (chopped) 12 ounces Mushrooms (any variety, chopped) ¾ lb Linguine pasta 12 ounces Grape tomatoes (split) Louisiana Love Seasoning Blends to taste Method: Prepare a hardwood fire on one side of the grill. Lightly oil and season chicken thighs, then place away from the direct fire and close lid. Allow chicken to smoke for 30-40 minutes turning once. Place pecan halves in small, heavy, dry skillet over direct heat, and allow to roast until fragrant being careful not to burn. Remove and reserve. Remove chicken and allow to cool, then cut half of the amount into a large dice, reserving the other half. In a suitable bowl, combine the pecan oil, vinegar, syrup, and Louisiana Love Seasoning to taste, whisking well to combine, then reserve. Place a large, heavy skillet over direct fire, add oil and allow to get hot. Sauté onions and mushrooms until onions are clear, but not browned. Boil the pasta according to package directions. Add garlic to pan and cook for 1-2 minutes. Add pasta to pan and toss to coat. Add Louisiana Love Seasoning to taste. Remove to a large bowl, add tomatoes, 1 cup roasted pecans, reserved vinaigrette dressing, and toss. Serve immediately. Smoked Guru Chicken Salad Ingredients: 2lbs. Reserved, smoked chicken thighs 1 cup Reserved, roasted pecans 1 cup White grapes, split 2 medium Apples (Honeycrisp, diced) 1 cup Mayonnaise Louisiana Love Seasoning Blends to taste Method: Cut chicken into a very fine dice. In a suitable bowl add chicken, pecans, grapes, and apples. Stir in mayonnaise a tablespoon at a time until ingredients are coated, being careful not to add too much. Season to taste with Louisiana Love. Stay hungry.

Flat Iron Steak Sandwiches with Guru Slaw Summertime may be grilling time, but it sure is hot! The less time spent in front of a fire the better. But that doesn’t mean we have to sacrifice flavor. This simple sandwich uses a less expensive, but flavorful cut of beef known as a flat iron steak. It cooks quickly, and it dressed with an incredible, grilled coleslaw, and Guru dressing. Talk about good!! Flat Iron Steak A flat iron steak, or sometimes called a Butlers’ steak, or oyster steak, is a cut from the chuck roast. It is cut with the grain and is fairly thin. If cooked, and cut right, it is perfectly tender and has incredible beef flavor. This cut lends itself to the reverse sear technique. That is when the meat is placed away from the direct fire until about 10° shy of the target doneness, then quickly seared over very high, direct heat. A heavy seasoning with Louisiana Love Seasoning Blends will complement the rich fat and beef flavor. Guru Dressing This original recipe is perfectly balanced with creamy richness, acid, and sweetness. It is the perfect condiment for this incredible sandwich. Ingredients: 1 cup Mayonnaise ½ cup Zatarain’s Creole mustard ¼ cup Dill relish 1 tablespoon Apple cider vinegar 2-3 tablespoons Steens cane syrup 1 tablespoon Louisiana Love Seasoning Blends (or to taste) Method: Combine all ingredients in a suitable bowl. Refrigerate for at least an hour before using. Notes: Cook the steak to a medium-rare to medium doneness. (130°-135°). This steak has a definite grain that is very easy to see. Cut across the lines in the meat into slices that are about the width of a quarter. Cook the coleslaw in a heavy skillet with a tablespoon or two of oil, over a hardwood fire for 5-6 minutes until it just starts to wilt, but is not soft. If the coleslaw starts to release liquid, simply drain on a paper towels. Use brioche or potato buns and toast them on the grill for incredible flavor. Spread dressing on both sides of the bun, and add some to the slaw. Stay hungry.
