Those are sample datasets that Celonis provide users to experiment with. They are derived from/ match with some datasets commonly found in the most common ERP systems (e.g. SAP). So there are about 6 that focus on some popular processes (order to cash), but you can upload your own using the 'quick upload' button.

The data log is typically extracted using ETL tools. ETL stands for 'Extract, Transform and Load'. A popular ETL language/tool is SQL. You can read up on how ETL works online. With regards to your question on timestamp: consider putting protocols in place that allow for data anonymization during the ETL process. That way, you can still apply process mining without infringing on privacy.
