Sounds good but the "no breadcrumbs" is misleading. He just replaced one carb with another (potato).

There's a huge difference. Bread is simple carb, potato is complex carb with more fibre and micronutrients. Any vegetable is better for you than bread. You could make this with any mashed root vegetable and it will be healthier than any bread.
