This happend to me but in PLA same Pokémon, first route before anything big happend. Used it throughout the game. Found a second one not even 5 days later.

one time, in a Scarlet game that i recently restarted, i was going to Artazon after the Bug Gym. i got a Shiny Shinx and named her Venus! the weird thing is that in the old save file for that was that i randomly found a Shiny Luxio who was my first Champion Shiny. sadly, i accidentally deleted that save file and lost her, along with a Shiny Sableye named Lemon. i also found a Shiny Phanpy in the recent save file and named him Jack :>

Dang, that would be so cool! :D Age of Calamity similar to what you said (but it takes place before Calamity Ganon shows up, so there's no appearances from Zelda's or Mipha's mother's :/)

My first shiny was a full odds Hoppip, just went I got Koraidon outside Mesagoza, around the area where the grass gym is 💀 I was not even looking for shinies at that time, I was wandering around for items..

That's pretty much what happened to me, ai got scarlet on release and then bought violet later and this happened 😆
