Hello Ms. Lareina, this upload is a great piece of value. I've been into dim sum for quite some time and I put a lot of respect for the chefs. If the art of dimsum is gradually fading in your country, I can tell for the very least that people in my country have been more familiar with this art of cuisine. lovely food!! But my main concern is always............about the hygiene standard (in many Chinese restaurant kitchens) which could be better. No offence to any one else.

This video really touched me. It is true that without a new generation to take over not only will the art of dim sum be lost, all types of cooking will be lost. Looking ahead, its not only cooking that is facing extinction. Long lost arts such as metal smithing and other arts and crafts will too. As the generation told to study hard, I now long for more after receiving my doctorate degree and working countless years. I am beginning to return back to the wok’ing days! Very nice insight into his life. I fear the Art of Dimsum might very well be lost as time progresses - it appears to be the same all over the world with regard to most things. However, humans have a way of returning to traditional methods which can never be replicated by machinery. And, those who traditionally were low paid will finally be appreciated not only for their skill but financially compensated like never before due to the shortage of skills. Six years on..., I'm curious to know if he has since retired? Much great fortune to you, regardless.

Its 2018 now, he might has retired. But in Vietnam, I have just started to learn Dim Sum. Dim Sum won't disappere, I believe in that. Thanks for your share, miss Choong

I have cooked for 22 years. It is only in recent years I have perfected to my tastes my Bao, hargow, taro dumpling etc. It makes me wonder what these guys could achieve if I gave them a proper kitchen and tools to work with. My 22 years have been hard enough,..without having to work off the floor, on uneven benches..with little more than knives and steamers.

aw shit decided to write an essay about dim sum due tomorrow morning and was doing research when it lead me to here honestly i don’t regret it, tradition and heritage need to be preserved for the centuries to come, it is priority that we keep these thoughts and ideas of the past as long as we can, with all this technology and such we still need to remember what lead to this and what truly matters in a future filled machines cooking dishes for us; it’s the same reason handmade clay pots and pans or crafted wooden tools, and even superstitions which you believed in as a kid may you still believe in, and why? because it provides the soul with warmth, todays world where everything is mass produced in a factory it’s a real beaut to see something made with the soul, to see stories and traditions passed down, those things fuel and power the souls, but what really fucks the soul up it watching those traditions die out. honestly cried at the end
