I am very happy I found your channel. This appears to be an easy recipe...(he says with only a pinch of hesitancy.) I'm going to make a smaller batch initially. I live alone & I can eat only so much (of anything.) Once I know I can pull it off, then I can make enough to give away. I'm an excellent cook...I have my rep to protect. 😄 I did have 2 things to ask... 1) If I can't get ahold of Korean Radish, what can I sub for it? I've never had it raw so I don't want to assume. 2) I know things can need adjusting. If I try a piece plain, after it's been brined & rinsed, would that be a good time to pause & check for the bitterness? Or is there still too much development that will happen to make an informed decision? Thanks for the recipe & video. I wish you had a restaurant...now.

I have 2 silly question?... (I know they can eaten in hours after assembled.) How many days should they sit, untouched...😄 before giving any jars away? How long will these keep in the fridge? (That's providing there is even a piece left after 3 ok 4 days. 😆) Thanks for the recipe .

I hope you see this, bc i really need your help. I tried this but i fucked up. The seaweed was mushy, i took seaweed nori because i thought everything was the same. So i got very confused 😭 Please specify what kind of seaweed. Also what can i use instead of shiitake mushrooms? Sadly they're unavailable in Germany. Also could you see if there is seaweed that i can order from Amazon? We don't have a korean store here. I needed to order everything.

the mushroom seasoning you reference is no longer found on Amazon. Can you possibly give us brand and full name? Maybe we can locate it other places. the mushroom seasoning on Amazon is a fine, silt-like powder and does not look like yours.
