Yes finally someone mentioned flat expanded grates it is way easier to clean than raised expanded so when I order my pellet grill from Chris I will be asking for flat grate

Dash thus us Mark from Staten island. Just bought a OKLAHOMA JOES LONGHORN SMOKER. I did a burn/seasoning first cook yesterday and had an extremely hard time keeping 250. I would reach that temp then it would drop to 125 any ideas why. I kept my dampner at 1/4 and adjusted only the exhaust dampner

Try keeping the exhaust wide open and then find a sweep spot for the intake and then lastly modulate the heat by the splits you add. Try adding 2 when the heat gets down to about 225 and e patient and see what happens. The temps should climb to about 300 and then slowly come back down. Try to shoot for an average temp of 250 not a steady temp of 250.

Here’s an added bonus of your mod since you said the ruler bends and goes to the bottom just before the auger. If you ever get what’s called a pellet bridge where the pellets kind of get stuck and a cavity forms above the auger and pellets stop feeding you can just wiggle the ruler and it’ll probably free everything up. It rarely happens but you never know. Some other brands are notorious for that happening.

Do you notice a potential for the grates to sag? I read about that and have a 20x42 on pre-order....but that cabinet looks so nice

So I'm sure if loaded down it could sag a little. It's 1/4" angle. I may remake shelves with stainless square tube and flat expanded stainless.

Hey buddy, thanks for the video. I want to do dogs and burgers but have them done a few hours before guests arrive. Should I keep them on that part of the grill, or put them in a warm oven, or other?

Either way will work, but the oven will be much easier since you won't have to worry about adding charcoal. Just make sure you use a keep warm temperature 150ish degrees

at 6:40 when you are talking about temps. not sure what came of it, but what I see is the thermometer on the door is around all the meet so that will be low. The fire when you just closed the door is going to be adding too many pellets. I don't know where the thermometer is inside for the fireboard to show temp but assume it is not far off from the fire.

Yeah the probe is on the bottom right not far from the burn pot. I'll be using an additional probe closer to the grate to help the cooker get to a better temperature.

That is genius! We think alike I use the same method for measuring my brew kettles for making beer in larger ones that aren't marked with gradients. I'll make note and do the same and put one in their permanently which Lone Star Grill I want.😊

Even though those Tel-tru temp gauges are top notch, it could be thrown off a bit from bouncing around during shipping. LSG usually ships them in the box for you to install yourself. Might just need a little calibration. I’m really liking that cabinet but I’d like to see a slightly smaller unit available.

That’s about as slick as your head. Once you figure out the cook rate, I’d be curious if similar brands burn as efficient as your trial pellets. We can get all kinds of nerdy here.

Dash, I had a customer wanting pulled beef sandwiches and requested it be brisket. About broke my heart having to shred 5 briskets. But brisket wis way cheaper than Chuck roast or any cut of beef. Great tip on cutting your flat slices in quarters!

Brisket was cheaper than Chuck? I'm pretty sure the Chuck might be cheaper in my area and that is what can be used to make poor mans burnt ends and might be decent for shredding. Just something to keep in mind. Beef Cheeks are also fantastic shredded. But not sure on the cost.
