i live in zurich switzerland ... but i go every year to père-lachaise ... on my 70th birthday i went ... in the afternoon ... in the evening i went to a concert with daniel barenboim ... he congratulated me (my birthday is like richard wagner and charles aznavour ... barenboim directed a lot of wagner) ... paris is a very special place ... in my youth i studied with a french schlarship at sorbonne ... paris has more important cemetaries ... e.g. montmartre and montparnasse ... but the most important and most international is père-lachaise ... you must spend a whole day at least ... and buy a detailed plan otherwise you are lost ...

It's an old french technique called en vessie. The bag is the pigs bladder, you put whatever you want to steam inside it, tie it up and poach it. The bladder inflates from the steam and traps in the moisture and fragrances of whatever aromatics you have inside. It's pretty much old school sous vide cooking. Similar to en papillote, just poached instead of baked.
