70% Hydration Sourdough Bread Recipe 500 grams of bread flour 350 grams of filtered water 100 grams of starter 12 grams of salt 8:00am MIX: filtered warm water with starter in a medium to large bowl. Add the salt and lightly stir, then add the flour. Mix everything until a shaggy dough is formed. Cover and let it rest for 45 minutes. 9:00am STRECH AND FOLD: around the bowl pulling up and folding completely over the dough. Cover and rest 30 minutes 9:45am COIL FOLDS: Perform a series of stretch and folds by lifting up the dough and allowing it to fold on itself. Flip the bowl 180° and perform the same technique, ensure that dough does not tear while stretching. Cover and let it rest 30mins Second set of coil folds at 10:15am Third set of coil folds at 11am Bulk ferment on the counter for 2-4 hours depending on your room temperature. Dough should rise 70% not double because it can over proof. After bulk ferment is over pre-shape your dough on the counter and flour your proofing basket. Allow 20 minutes and do not cover, let it form a slight skin on the surface. Next shape dough to your basket shape and lightly flour the top surface to place the dough in the basket. Once in the basket stitch the dough together to provide additional strength and tension. Allow an additional 20 minutes to rest and perform one last stitch. Cover dough and place into the refrigerator for cold retard fermentation. 8 hrs to 24 hrs The following morning bake at 450° for 25 minutes with the cover on, if using a baking vessel. After the 25 minutes are up remove cover and lower temp to 400° and bake until desired color is achieved. Remove dough and check internal temperature of 200-205°. Allow bread to cool as it is still baking before slicing, approximately 40 minutes Slice and enjoy

I never understood why people boil water to make spaghetti. I’m a horrible cook and I figured out that it’s better to steam pasta years ago. In fact if you get the right amount of water during steaming you don’t even have to strain! It’s ready to be put on your sauce right as it finishes!

Just picked up a #10 for two bucks at a garage sale unused. Could not agree more about eggs and cast iron. I have a few single egg cast irons that I always use. I use enough oil to almost float them. More oil is never your enemy when it comes to cast iron IMHO

😆 this was so good. I changed up a few things, I added bell pepper, more garlic, yellow onion instead of shallots, veggie stock, a bit of heavy cream and a dash of chicken bouillon. It’s was sooo good

Yes exactly direct heat on high over the skillet with the wood chips. I didn’t show it on the video but I also lit the cherry wood chips and preheated the grill.
