Millet ambali is a naturally fermented millet recipe and it's also a great source of probiotics. To prepare fermented millet porridge, take any small variety of millet, wash it, and soak it for 8 hours. After that discard the soaked water and pulse it a few times. Then cook it in 4 times water for 10-12 minutes on a low heat. After cooking transfer, it to a clay pot or glass bowl and cover it with a nonairtight lid. Leave it on your kitchen counter overnight or for a minimum of 8 hours.

No Psyllium husk has a different role and that cannot be replaced by potato or rice starch

I tried this bread today, but it was sticky from inside. My yeast was extremely good but it didn’t rise much. I baked in oven after 1.5 hrs n baked for 50-60mins as I felt it was sticky inside. Kept it in oven n covered it too but it came out sticky but outside it was done. Where did I go wrong.

This is vegan honey and can be substituted with sugar. You need any type of sweetener to activate the yeast.

I tried the bread - it rose so well in the fridge fermentation but when i removed it from the container to put it in the oven it flattened while baking. Any particular reason this happened? My starter was floating in water so i assumed its strong!

Did you followed exactly same measurements? This could be too much water and flour didn’t absorb much. Or over fermentation can make the bread flat.

One of the reasons could be your sourdough starter was not strong enough or due to over fermentation
