Very nice. I like my pougouri with beef stifado and natural greek yoghurt. Best thing is the mix of flavours, textures and even temperatures (with everything hot except the yoghurt). It's what I'd cook if I was a contestant on masterchef.

why 45 minutes in the oven everything was already cooked before???

Great question. In order for everything to blend together and the liquid bachamel tp thicken up and get the golden brown color, we need to bake everything for 45 minutes.

Στα αγγούρια καθαρίζουμε την φλούδα.....αλλιώς πικριζουν.ολοκληρο κρεμμύδι,ολόκληρη πιπεριά,ελιές μαύρες και Καλαμών.......δεν ρίχνουμε λεμόνι....μόνο λάδι έξτρα παρθένο και αν θέλουμε ένα ...τατσ...μπαλσαμικο

For the non-Greek speakers, here is athanev's excellent advice: "Clean the skin on the cucumbers.....otherwise they become bitter. whole onion, whole pepper, black and Kalamon olives.......don't add lemon....only extra virgin oil and if we want a...touch. ..balsamic". If you try it, please share how it goes.

Hibiscus tea is SOOOOO good! Supposedly it lowers blood pressure, although I don't know for sure that's true.
