Very nice. I like my pougouri with beef stifado and natural greek yoghurt. Best thing is the mix of flavours, textures and even temperatures (with everything hot except the yoghurt). It's what I'd cook if I was a contestant on masterchef.

Great question. In order for everything to blend together and the liquid bachamel tp thicken up and get the golden brown color, we need to bake everything for 45 minutes.

For the non-Greek speakers, here is athanev's excellent advice: "Clean the skin on the cucumbers.....otherwise they become bitter. whole onion, whole pepper, black and Kalamon olives.......don't add lemon....only extra virgin oil and if we want a...touch. ..balsamic".
