Dont do this, it will be harder to find the specific peace you are looking for. Sort by piece will be better.

You could but most people don't have nearly enough drawers to sort in that style so we followed what LEGO Masters does and sort by color! We also split the drawers with flat and non-flat pieces to make searching easier.
