As a South African it looks good but you forgot the Worster Sauce and rather use brown sugar not white 😊

You put them in the ic bath to wash the soot off? If you have soot on them you're doing something wrong. Ice bath to stop the carry over cooking.

Put some butter down the grinder 1st!! It makes grinding alot quicker!! Also spray the mixing bowl with oil, let the mixer mix the meat!!

Last time I visited my bro and his Ukrainian wife in the UK, my sister-in-law made me borscht and it was amazing, but she didn't have any sour cream but we used yughort instead, and I just wanted more yughort in my borscht, just like you lol. As I said before, I'll surprise them with your mom's recipe, next time when they come to Belgium to visit me. Thank you once more. This is the best borscht recipe I've found on youtube.

U didnt put the bladder plate in the grinder!! It has 2 large holes in it, u put that in the grinder instead of the blade! And the plate with small holes!! There is also a white plastic spacer, u didnt use that either- read ur book!!

I assume you are using dry roasted buckwheat KASHA. Is this correct? Which is different from raw buckwheat.

I just finished up the last of my last batch of Borscht today. So good - especially two+ days after you make it. No bell peppers, celery, tomatoes or potatoes though.

Great recipe! I make this salad a lot too and am from Eastern Europe as well. We usually use the chicken and veggies from our chicken soup to make this. Ours is pretty much the same. Just a little tip, before you make these salads, try out the recipe first always and the contraptions to make sure they work like they are supposed to before doing it for an audience. Edit more.

I have never met a Ukrainian or any European butcher that did not use animal casings for kobasa plastic is never used by traditional butchers

You only need salt, black pepper,coriander and maybe nutmeg. Balsamic vinegar gives it a nice taste but you can use any vinegar.I leave my meat in the vinegar for twenty four hours then I take it out and slightly press the meat into a tray with the spices. Hang it up straight away.Don’t dry the meat off. The vinegar kills the bacteria in the meat, so the longer the better.🇿🇦🇦🇺🇬🇪🇷🇺🇷🇺🇷🇺

Why are you destroying the meat with the sugar?That is so stupid!As a South African I grew up making biltong with my Grandfather and we never used Sugar. Please watch “Two guys and a cooler on KZfaq or there is many South Africans that will glad show you how to make biltong the right way. No sugar and no dehydrators.

I rub my pig inside and outside with truffle salt and then rub the inside with crushed garlic and stuff with green onions, leeks, sliced fennel and lemon grass. That’s my flavors!

As a south african biltong is nothing like beef jerky, beef jerky is horrible, sorry. Change apple vinegar to red wine vinegar way better.
