It would be nice if he washed/hand sanitized after changing the trash bag but he was wearing gloves and changed to a brand new pair immediately after. I guess he could do a bit better keeping the lids closed on the ingredients but that's not a health code violation. Restaurants have open containers and uncovered dishes, pots, and pans in the kitchen all service long. As long as things are being cooked/kept at safe temperature (which the steam rig in this cart should be doing) it's not really a health hazard. Dude also does a good job changing his gloves often. There is no cross-contamination occurring between raw meats and other ingredients because there are no raw meats in this set-up. Hotdogs come fully cooked and he makes the chili before he loads it up. He makes no bare-hand contact with foods. Maybe you don't like that he wipes down the top of the serving rigs with a cloth he's got hanging out rather than a sanitizer product? Totally legal and fine to do it his way. Using a sanitizer product during the middle of food service would actually be dangerous as it could get into the food. The lids of those serving also get hot enough during service to deter any bacterial/pathogen issues. Restaurants don't have to keep their cooking areas fully sanitized all service long anyways, they'd never get any cooking done if they had to keep the kitchen spotless during service. You just need to keep it relatively tidy and not let trash and cross-contamination dangers occur then a proper sanitizing needs to happen at the end of service, which this guy almost certainly does.

Just observation, put the stack of plates on the cardboard on the left so you don’t need to reach and grab, and I’d bet if you put a napkin dispenser outside, only half the people would even want one, everyone licks their fingers and has two sleeves to wipe their mouths! Could save you time and cost. Can’t wait to come for dogs soon at branch brook park.
