I can't find lamb liver here without going to some speclaity stores. in the States, so I generally do this with veil, liver. My technique is almost identical, only real difference is I like to serve with a side of mash and mushroom gravy.

This is why I adore liver and onions cooked properly, but of course use lambs liver👍every single person who has bad experiences of this dish is because they had calf’s liver as children. I personally love pancetta served with the dish, but I’m a heathen 👌

Hey mate love your work I am a chef and have been following your channel for a long time always love watching your recipes. Some advice after watching this I think you could have added some of the ingredients in a a different order. I would recommend adding the sauce to the pan first with the pasta water, heating that up then adding your pasta to ensure the sauce mixes with the pasta really nicely. I would also recommend adding the squeeze of lemon the same time you add the herbs at the very end. When you heat lemon too much adding it early in a sauce it loses a lot of its acidity and flavour and can become quite bitter. Adding it at the end with the herbs would ensure you get maximum flavour and freshness from both your herbs and lemon. Thanks again for your videos I really enjoy and keep up the great content
@thewestcountrykitchen68436 күн бұрын
Hey Mate, thanks so much for the comment and feedback 😄 really appreciated. All really good points, cheers, I usually go with the pasta first myself just so I can control the amount of sauce haha, on occasions I've ended up with slightly too saucy and sloppy Tag Lol. The point about the Lemon is interesting, I have never had an issue with bitter Lemon before but I'll be experimenting now you have mentioned it, adding it later makes allot of sense 👍

Looks great, but never chop up basil leaves with a knife. rip them by hand. Youll lose flavour otherwise
@thewestcountrykitchen684316 күн бұрын
Thank you very much 😊 it is tasty! I disagree about the Basil though, with your hands you end up squeezing and bruising the leaves, there's so much less contact with a knife... hands are all good though, you would never notice the difference 👍

hey, this looks like a great recipe, but the way the shots are done in this video is really distracting - going back and forth between the different angles and zooming in & out (idk if this is a transition or?) way too much. it's dizzying/headache-inducing and makes it really hard to watch/focus on the video. just wanted to give some constructive feedback, the recipe itself looks divine! side note: I think you could also benefit from brightening the colours a bit to make the food look more attractive - it looks a bit dark

as a lancashire lad - less carrot and finely chopped, celery finely chopped - onion sliced - crumbled black pudding, lamb neck end on the bone, lots of thyme - taters thickly sliced on bottom, meat and veg well browned , gravy made in pan , pudding crumbled in gravy frsh thyme lea and perrins and bay added - thick taters put in 1st, then meat/veg thin taters on top extra gravy poured over, melted butter brushed - 180C oven for 20 mins, turned down to 130 - take dog a walk, have quick pint on way home - take lid off, stick under hot grill - serve with pickled red cabbage and boiled savoy with another pint of good beer and end with apple pie and cream

Hello. I’ve found your video while searching for liver and onions video help. I have purchased chicken liver and shallots. I’ll use your video to try making it for my fiancé. I can see that liver cooks quickly and should be slightly pink inside once cooked. Your video looked the best out of all the videos I’ve seen, so you know. Maybe you’re in the UK too. Anyway. Thanks in advance for the help 👍

That’s frying not roasting. “Pan roasted” would imply you roast them in a pan which would require a pan in an oven.
