@Burrfection if you watch even more closely the water is running up the blade when the blade is facing him therefore that has to mean that the stone is turning counterclockwise. Therefore if it caught the stone it would fling it away from him.

Why don't you ever show the knife grind? The hardness of the steel and the cosmetic aspect are importants, but the grind plays a decisive role in a knife's cutting capacity, specially the thickness behind the edge. The grind also plays a role in food release capacity. It's a real shame that this aspect is never addressed!

Could you explain why you wouldn't stroke the same number of times on each side? How do you get from the fact that the edge ratio is 70/30 (right side is wider than left side) to the idea that you should stroke the sides in the same ratio? I don't understand the logic in that AT ALL. If you use the same number of strokes on each side (as you would with a 50/50), you're going to take more material off the right than the left naturally because the surface area is greater. Why would you want to magnify the difference? Why wouldn't what you're doing push the apex leftward over time? The difference in the bevel *angles* could have a small effect, but the angle ratio is not the same thing as the edge ratio and cannot be inferred fom it.

I’m very interested to hear how MagnaCut works for kitchen cutlery. I like the hardness, as long as it’s not to brittle & holds its edge well I think I would love it. But I do like Japanese style blade shapes better than western chefs knives. Good to see you back bro. Best wishes to you and your family. ✌️🇺🇸
