The pate and mayo are my favorite parts of any banh mi
@ChefQsTravelRecipe8 күн бұрын
Honestly, after making the pate… I kinda feel guilty adding mayo to my sandwich knowing that the pate packed a bunch of butter and pork fat already 😂 but it was soo gooood!

Thanks so much for the tips! I always brought the premade mixes but that's getting more pricy at the grocery store. I will have to experiment to get the texture I want.
@ChefQsTravelRecipe10 күн бұрын
I always find the premix ones aren’t as crispy. It’s pretty simple mix and the Ingredients are easy to get now.

Are you able to show us how to make the small clear broth soup w/ clintro/green onion garnish on top that always come with that dish when ordering? I really love that clear broth soup. Do you by chance know the name of it?
@ChefQsTravelRecipe10 күн бұрын
The clear soup broth in restaurants is an extra complimentary side that they serve up. If you go eat at a com tam place in VN, there’s no soup. The soup usually is a pork base soup that they use for their other noodle soup dish on their menu. Or sometimes pho restaurants give you pho broth too. But usually It’s a “Hu Tieu” broth made from pork bones and dried shrimp. I will definitely do a “Hu Tieu” video soon :)

Will it still be good without liver?
@ChefQsTravelRecipe13 күн бұрын
You can do without liver. This is just the authentic original recipe. The restaurant in the states don’t put liver on there. Just ground pork.

Tough luck lol I’m sure you consume it everyday without knowing it. Just enjoy the life my friend, stressing over a bit of salt isn’t going to make your day any better. Unless you have high blood pressure or course 😅

lol 😆 obviously it won’t be authentic without it. It’s part of the culture lol especially Asian culture. If you eat authentic Asian food, chances are there’s msg. Cry about it bro lol

He said “one clove” of garlic, but from the video he seems to have meant “one head” of garlic. Maybe I have an idiosyncratic understanding of these terms, but there you go

One thing I don't really get is that, you char the onion/shallots. What's the point of charring it if you wash em off??
@ChefQsTravelRecipe29 күн бұрын
Charring/roasting it brings out the aroma and flavor. You don’t want the burnt charred in there. It will make your broth dark and bitter taste. You’re washing away the impurities. The aromatics will still be there.

Unfortunately the difference in culture appreciate differently lol we enjoy the crab inners. Y’all just throw everything away. We actually use the inners in some of our cooking. Not just Vietnamese but most Asians.
