Also this process of putting together a soup noodle dish is essentially the same as how Japanese makes their version of ramen, but they typically use pork or chicken as the main soup base.

I agree with you, most of the time the noodle soup is actually Pork bone broth or beef broth. However, at this restaurant, it came as a surprise to me too that they use chicken broth. This bowl of noodles is very different from many since the boss told me he has come up with a fusion of flavors. Using, Shanxi style noodles, Eastern-style chicken soup, Guangdong sauce, and Sichuan chili oil in the soup. *I hope you enjoyed the video ;)*
