When I went to Jamaica they were using the Walkerswood “seasoning” as a dipping sauce. They would mix it with ketchup and water to a desired consistency.

Sodium Hydroxide beads in water also called lye just don't get it on skin but soak them parts in tote with water and the beads mixture and spray mix inside the grill and pressure wash it be shining like a Dimond

I love my treager. I have a Webber gas, Treager smoker/grill, and a Webber kettle with a rotisserie. I’ve been talking about getting rid of the gas grill. I even used my treager the other day as an oven for baking baked beans. Recipe calls for 325F for 2.25 hours. It was in the 90’s outside and didn’t want to put more of a burden on my AC. Works great!

more like 225f for 4 hours then rap in aluminum foil until they are soft maybe six hours total then back on to get some bark

Sir, Thank You! That was delicious! We left it together in its netting and cooked it on a bed of garlic and onions. Then we made a lovely sauce afterwards with the reduced fat and the wonderfully caramelized garlic and onion! There was other goodness in there we added too, but I'll keep a few family recipe secrets. :) We kept it at 335 but for the last hour 325 almost 4 hours total I think. We kept basting it throughout. With a gas oven. But we like well done. It turned out so tender. :)

You tried holding low temps with the top damper wide open which is a no go and why you kept climbing and too much wood for lighting it in the center. Each piece of wood catching is going to raise your temps 20-30 degrees for at least 10 minutes. The original method you mentioned starting on one side allows for both longer cooks and to not catch all the wood.

Your cook looks great but I don't see the purpose of the Weber heat controller. You're using the snake method for your charcoal. That will automatically give your temp 225* - 250*. So, what does the Weber thing actually do, other than make a mess.

You might be right, but I tell you. This thing stays right at 250. Never had flare-ups or Spikes in temp With the snake method. I've had flare-ups And spikes in tips.

@@jimswanny1193 These are “beef back ribs”, not like the usual Dino ribs you might be used to seeing. These are cut pretty close to the bone so that they save the full prime rib intact, like you said, at about $8/lb. You should be able to find this cut for much cheaper.

Another option is to let it rest for at least 30 minutes before the sear or put into a 400-500* oven for a quick sear. It will not "bleed," and internal temp will not rise enough to change anything. No gravy juice though. ;)
