Certainly! Here's a detailed recipe for Vegan Chickpea Nuggets scaled up to make a larger batch, suitable for approximately 40 servings. This recipe is perfect for batch cooking, meal prepping, or larger gatherings. --- ### Vegan Chickpea Nuggets Recipe (Large Batch) #### Ingredients: - 6 cans (15 oz each) chickpeas, drained and rinsed - 3 cups breadcrumbs (gluten-free if necessary) - 1 1/2 cups nutritional yeast - 1 1/2 cups finely chopped onion - 12 cloves garlic, minced - 12 tablespoons fresh parsley, finely chopped - 6 tablespoons ground flaxseed meal - 18 tablespoons water - 6 tablespoons olive oil - 2 tablespoons smoked paprika - 1 tablespoon ground cumin - 2 tablespoons salt (or to taste) - 1 teaspoon black pepper - Cooking spray or olive oil for brushing #### Instructions: 1. **Prepare Flaxseed Egg:** - In a small bowl, mix together ground flaxseed meal and water. Set aside for 5-10 minutes to thicken. 2. **Prepare Chickpeas:** - In a large food processor (you may need to do this in batches depending on the size of your food processor), combine chickpeas, nutritional yeast, onion, garlic, parsley, olive oil, smoked paprika, ground cumin, salt, and black pepper. Pulse until well combined but still slightly chunky. 3. **Combine Mixture:** - Transfer the chickpea mixture to a very large mixing bowl. Add the flaxseed mixture and breadcrumbs. Mix until everything is evenly combined and the mixture holds together well. Adjust consistency with a bit of water if needed. 4. **Shape Nuggets:** - Preheat your oven to 375°F (190°C). Line several baking sheets with parchment paper and lightly grease with cooking spray or olive oil. - Take about a tablespoon of the mixture and shape it into a small nugget using your hands. Place it on the prepared baking sheet. Repeat until all the mixture is used, spacing the nuggets evenly apart. 5. **Bake:** - Lightly brush the tops of the nuggets with a little more olive oil or cooking spray. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the nuggets are golden brown and crispy. 6. **Serve:** - Remove from the oven and let cool for a few minutes before serving. Serve with your favorite dipping sauces such as barbecue sauce, ketchup, or vegan ranch dressing. #### Tips for Large Batch Cooking: - **Batch Cooking:** Depending on the size of your oven, you may need to bake the nuggets in batches. Alternatively, use multiple ovens or stagger the baking times to accommodate all trays. - **Freezing:** These nuggets freeze well. Once baked and cooled, place them in a single layer on a baking sheet and freeze until solid. Then transfer to a freezer-safe container or bag. Reheat from frozen in the oven for best results. - **Customization:** Feel free to adjust the seasonings and spices to suit your taste preferences. Experiment with different herbs and spices for variety. - **Storage:** Store any leftover nuggets in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or toaster oven to maintain their crispy texture. --- This large batch of Vegan Chickpea Nuggets is perfect for preparing ahead of time and enjoying as a delicious and satisfying snack or meal option. Whether you're hosting a gathering or meal prepping for the week, these nuggets are sure to be a hit with vegans and non-vegans alike!

I love mushrooms but I'm not vegan, and calling this "fried chicken" when it's not, is misleading and disrespectful!!!

Are you blind to the "vegan" part?
@queen.of.disaster_2 күн бұрын
@@voice7819 still nothing to do with "chicken". Why not just call it "fried mushrooms" because that's what it is! Just proves vegans crave the "chicken texture" of foods. If people are looking for a recipe for "fried chicken" and this came up, it's just annoying and stupid. Also scroll down as there are thousands of comments asking the same thing. So don't just @me!

@@queen.of.disaster_ Because the point is to imitate chicken. Why is fake/faux leather called leather even though it has nothing to do with leather? Because it's like leather. Which one describes it better: "a fake leather jacket" or "a plastic sheet jacket"? I have no clue what the latter would be. If you can get chicken's texture/taste from plants then it's not chicken's texture. It's just as much plant texture. So why are "meat eaters" making chicken taste like plants? Stop being a hypocrite. It works either both ways or no ways at all. Not just one way.

@@queen.of.disaster_ What part didn't you understand? The point of this recipe is to imitate fried chicken. Hence the name "vegan fried chicken". The name should tell you immediately that it's not chicken.

@izaomiwin6861 Uuh...crime?! Of what?😂 Dude, if your ancient ancestors"thought" like you do & avoided eating the animals that had no problem eating whatever they desired including perhaps the occasional "you," you probably wouldn't have even existed today to be able to at least type that absolute drivel from that privileged (but unfortunate) brain that evolved to possess such sophisticated intelligence as to be able to produce the small but powerful computer in your hands to type that nonsense on, in no small part due precisely to the rich diet that included almost everything their environment had to offer. I would say that THAT was infinitely more admirable.
