If a mob has picked up an item, it can't despawn. So since you are only using mobs that pick up items, the nametags aren't necessary

You should try n make it re-usable. So that once you've completed the dungeon you go out, you hit a button. Mob farm starts generating mobs again, skeletons and zombies gets separated and given the right armor and sent to the right locations. Once all the mobs are in place a light turns on indicating you can use the dungeon again.

Would love to see more use of the amethyst glass (blanking on the name). It prevents sunlight, so the mobs won't burn but you can still see into your masterpiece.
