Hi. Thank you for your message. Not sure if you are talking about this recipe or how to use agar in general. If you want to use all of your 25g of Telephone Agar to make this recipe, use about 12g of each for layer (milk and butterfly pea water.) In this recipe we use 1.5% to agar powder to liquid so, your ration should be For milk layer 600ml milk 7 tbsp 12 g agar For the butterfly pea water layer, the ratio would be the same. Just switch milk to the butterfly pea water. In case you are talking about the general how-to of using agar, use 0.5-2% of agar powder to the liquid u use depends on how firm and brittle you’d like :) The amount of sugar doesn’t effect the texture much if you are not making kohakutou (crystal gem), but it can make your other finished dishes more translucent. Ingredients: 1. Water: 200 ml 2. Grape peel-infused water: 200 ml 3. Telephone brand agar powder 1.5% of the total liquid (400 ml), equivalent to 6 grams or approximately 2 teaspoons. 4. Red grapes: as desired 5. Sugar: 50 grams Instructions: 1. Peel and clean the grapes. 2. Boil the grape peels in water for 5-10 minutes. 3. Strain the peels to obtain 200 ml of water. 4. Soak the telephone brand agar powder (6 grams) in 200 ml of water, stirring well. Let it sit for 10 minutes. 5. Bring the agar mixture to a boil. 6. Stir well to ensure the agar dissolves completely. Check for a smooth consistency (no agar particles sticking to the spoon or utensil used for stirring). 7. Add sugar (50 grams). 8. Mix the strained grape water (200 ml) with the boiled agar mixture. 9. Stir well and remove from heat. Pour a small amount of the agar mixture into the mold, followed by placing grapes. 10. Continue pouring the agar mixture until the mold is full. 11. Let it set. 12. Once set, remove from the mold and serve. Enjoy!

Hi. Thanks for reaching out. Do you mean ml of water in a typical ratio Or for this recipe? The amount of agar powder depends on how firm the texture you’d like. The easiest way is to use 1% agar to total of the liquid. So, 2500 ml. But for this recipe we use 1.5% of total liquid 880 ml. The amount of agar then is 13.5 g. Thus, if you want to use a whole agar package of 25g, you double the recipe.
