mom's spaghetti sauce is shit. You don't need all the bullshit tomato sauce, crushed tomatoes and definitely not tomato past. Just get some whole peeled tomatoes in a can and get the good shit. And for the love of god please don't add water!! Pot with a good amount of extra virgin olive oil and cook some onion(1/4 cup or so, not much) util translucent. After that add some sliced garlic and cook with the onions for a few minutes and throw in a few leaves of basil. Put the whole peeled tomatoes in a bowl and crush them up with your hands. Add that to to the pot. Simmer that for about 30 minutes and then add 2tsp of kosher salt. Let that cook for about 5 minutes. Taste for salt. Throw in a handful of basil leaves and turn off the heat. Boom, sauce is done and without all that 3 or 4 different tomato products. It doesn't even look good, ffs

My wife doesn’t like onions, or cooked celery. One Sunday, at the fire house, the veggies were bad, the sauce tasted fine to everyone,So I stopped using them. Sometimes I do put in a beef shank,if the store has some, Maybe I’ll do that from now on. Sounds like a good idea. Thanks. Miss cooking with my Mom and Nonna.
