Rooster fish are not labeled as tasty by most people palate. If you like them great. Being sport fish most people treat them like permit and do not harvest them . And permit actually taste good. If You tell people roosters taste good which they don’t everyone is going to keep them.

My 14 year old son and I fished with Jose last year. I called him a week before and let him know we wanted to do some hands-on, light gear inshore fishing.
