but doesn't balance transfers have fees? So like if it has a 3 or 5% fee, that's basically like a 3-5% interest off the top.

Yes! Most cards will have a 3-5% balance transfer fee but you will have 0% interest for a defined period so it benefits you overall because you aren’t compounding interest either way the goal with credit stacking will always be to pay down your balances over the 0% intro apr period
