i once tried a recipe that looks pretty similar to this one, heres what i did: separate egg white and yolk, put a little salt in the white and a tablespoon of sugar in the yolk, beat the white until it had the texture similar to the one in this video, then i put some orange juice in the egg white and gently mixed it, then i put it in a pan and covered it, when the fist side was cooked, i turned it then poured the yolk on the cooked part of the egg (it will cook with the heat of the egg), and i enjoyed my meal
