ZUCCHINI QUICHE CASSEROLE 3 C grated zuccchini (about 2 medium zucchini) 1 C Bisquick or my baking mix 1/2 C grated parmesean 1 C grated sharp cheese (I used 1/2 sharp and 1/2 smoked sharp) 2 tsp parsley 1/2 tsp salt 1 tsp oregano dash pepper and garlic 1/2 C oil or applesauce 4 beaten eggs 1 pie crust Beat eggs, mix in the garlic, oil, parsley, salt, pepper, oregano. Mix in cheeses. Mix in zucchini. Mix in baking mix. Combine all well and add to pie plate with pie crust on bottom. Bake at 350 F in 8x8 or 9 inch pie pan for roughly 40 minutes or until toothpick comes out of the center clean testing for doneness.

You can try them any way you want. Me personally, I'm not a fan of the chicken and waffles where you pair fried chicken with a waffle. PA Dutch chicken and waffles is a roasted chicken gravy over the waffles with mashed taters, corn and pepper cabbage, LOL. I'd worry it'd be dry, but you can sauce it up!

My Romanian mother in law used tomato soup and a tiny bit of brown sugar along with the kraut in her sauce. I substituted finely chopped mushrooms instead of rice when I made her stuffed cabbage to cut back on the carbs. This was a very tasty substitute. She used one-fourth pork to three-fourths beef.

I've worked in the coal region since 2014 and when I first started, I would see banners hanging on the bridge into town advertising Soupie contests and had no idea what it was. One day I asked a couple of the drivers at work if it was a chili cookoff or something because I make great soups and they all looked at me like I sprouted an extra head. The next day one of the guys brought one in for me to try and it was fantastic! I recently made the permanent move to the area and I am fortunate enough to have a boyfriend that makes his own every year with a group of friends because I love taking them to cookouts and parties back home (Perry County, PA) where people have never heard of them. They're definitely a highly requested dish now! Thanks for the background and lesson on them!

Allentownian-PA Dutchie .... Amish baked beans are soooo GOOD!!! When my grandmother's, mother, and aunts made this, they'd make GALLONS of it! Mostly for family reunions, holidays, and church socials. One ingredient they sometimes added that took it up a level, was pineapple. Chunks, rings, or crushed. Sometimes with a bit of the juice. No measurements, all "eye-balled" 😂😂😂 Amazing! Also, they added yellow mustard ..... no molasses usually. Our family made "Depression" BBQ sauce with ketchup, yellow mustard, and brown sugar. The mustard measure should be half that of the ketchup volume. Brown sugar to taste. And a little salt, which enhances the sweetness. Serve hot, or cold.
