I like to imagine it's kinda the opposite, the commander of the garrison sees these peasants hauling off the corpse of a Grail Knight and just yells "YOU THERE, FALL INTO ZE FRONT LINE, ZE ORCS ARE COMINGE" and because they panic they pretend they're actually a garrison unit.

The undead should have a unique building where they desecrate the tomb and use it summon a powerful undead. Like a French version of krell. I don't know if the bodies are protected in lore.

It's especially awkward when in a VC settlement. Like all the shuffling undead horrors there to defend the city and there are these weirdos carrying around a fully armored corpse and a horse running around the battlefield. While the vampire lord is just watching and going, 'Bless them, they are trying their best to fit in.'

It's actually very hard to resurrect the body of someone properly buried in Warhammer, since they have Morr protection. Add to that the blessings of any God light or dark and it's usually more trouble than It's worth. Krell is a rare example because he actually struck a deal with Nagash to be resurrected, forsaking his allegiance to Chaos.
