Your flour to oil ratio is a bit off. There’s absolutely no need for the initial olive oil, the beef will almost instantly release its own water and oil. Save about a tablespoon of ground beef grease to sauté the onions with the butter and cut the second helping of olive oil. Again, unnecessary when the beef will make its own oil. Southern gravy generally ends up around 1 tbsp of grease/oil to 1 tbsp of flour. You can stretch this to almost 2 tbsp of oil to 1 tbsp flour without it breaking too bad, but that’s the limit before needing more flour. More whisking and slower incorporation of beef stock would also prevent the BP-Valdez oil slick from forming on top.
