I love how he responds to the question about Yixing: Yes, Yixing also seasons your tea but Nixi does it better. He's proud of his work and wants to make it clear he's not making just another version of something more well-known. An artist/craftsman who really cares about their work is always inspiring.

Master Zhang says 7 grams of leaf is standard for a gaiwan "like this": what size is he using? It looks about 110ml, but perspective can be deceiving.

I am amazed that you can understand him! I speak mandarin fairly fluently but his accent/dialect is very strong and I needed the subtitles to understand what he was saying because his intonations are completely different from what I am used to. well done!
