Based off the ingredients this looks like a very good rich cake... But I would prefer 4 scant cups of granulated sugar.. I once tried a recipe with confectioners sugar.. my family didn't like it so much.. ❤

This is my go to for the winter. I love making them as muffins for a quick pick up and go for lunches. And just as u did ya own thing- I use sweet plantain sometimes just so I don’t toss it. As soon as it’s really cold, I’m back to baking 🙂

I also found this one up on C&H Sugar's website, but I have had issues with it, so I'll post here for you. 1001 Pecan Delights Ingredients 4 cups 1001 Cookie Starter Mix 1 (3-oz.) pkg. cream cheese, softened at room temperature 1 large egg, lightly beaten 1 teaspoon vanilla extract 1 teaspoon almond extract 1 1/2 cups pecans, finely chopped C&H Powdered Sugar , for dusting Instructions Preheat oven to 350°F. Grease cookie sheets or line with parchment paper. In large bowl, mix together cookie mix, cream cheese, egg and extracts. Stir in pecans. Scoop 1 teaspoon dough and shape into 1-inch balls. Place on prepared cookie sheet about 2 inches apart. Bake 12 minutes. Remove from oven and, while still warm, dust with powdered sugar and cool on wire rack. Yields 3 to 3 1/2 dozen cookies

Pineapple sheet cake with cream cheese icing Preheat oven to 350 bake for 30 minutes Yellow sheet cake batter. You can use this batter to make a yellow cake with chocolate frosting 4 large eggs 2 cups of sugar 16 ounces of heavy whipping cream 3 cups of sifted cake flour or sifted all purpose flour 1 teaspoon salt 4 teaspoons baking powder 2 teaspoons of vanilla extract 1 teaspoon of imitation butter flavoring In a bowl add flour,salt and baking powder and whisk good and set aside 3/4 cup of pineapple juice from a can of pineapples(to drizzle over the cake when it’s done and warm and leave the rest of the juice for the icing listed below) THE ICING AND PINEAPPLE TOPPING 1 (20 oz can) of crushed pineapple drain BUT SAVE THE JUICE 8 oz cream cheese ROOM TEMPERATURE Half stick of melted butter One pound box of powdered sugar 1 teaspoon vanilla extract 1/4 cup of pineapple juice In a kitchen aid with paddle attachment we are doing the cake part now Put in the eggs,sugar then start on low then turn it up and once it is mixed good then turn on low add in whipping cream slowly while it is mixing then add in vanilla,then add the butter extract then add in one heaping tablespoon from the flour bowl at a time while it is still mixing on low until it’s all gone then cut off and scrape down the sides and bottom and then continue to mix on high for about 30 seconds then spray your long deep baking pan and pour your batter in and spread it out evenly and then pound the pan gently on your counter top about 5 times to get out any air bubbles and put in the oven uncovered. WHEN THE CAKE IS OUT OF THE OVEN take a fork and poke a bunch of holes in the cake and then use 3/4 cup of pineapple juice and pour across the cake then take the can of crushed pineapple and lay across the entire cake and set the cake aside while you make the icing using the ingredients above. ICING done in kitchen aid with paddle attachment on. Put in all the cream cheese,butter,powdered sugar,vanilla extract,pineapple juice then start out on low then turn up to number 2 until everything is combined and no lumps in it then the icing is done.IT WILL BE RUNNY AND THATS WHAT YOU WANT. AND NOW TAKE THE ICING AND POUR IT OVER TOP OF ALL THE PINEAPPLE THATS ON THE CAKE.
