Nice prep. Liked the oregano variation in the marinade. The only thing I would change in this, when I make it, add 1 tsp of EV olive oil in the salad while mixing. Gives a sheen as well as binds things together. Another variation I would like to try is, add minced garlic in the marination. If you do experiment with various salad dressings, would love to see that.
