You will get a much lighter pastry if you use self raising flour, the pastry won't be as chewy. Once you have made the pudding, pre-steam it on the open vent for 15 minutes to give the raising agent a chance to work, then set the pressure valve to the low setting and steam for the normal amount of time. Let the pressure reduce at room temperature (not by the cold tap method otherwise the meat can sieze up and toughen) and you will find you've made a beautifully light fluffy pudding.

Don’t forget lemon juice 😀. It was more about sharing the experience of cooking such fresh fish and demonstrating that sometimes you don’t need lots of ingredients. The main ingredient (fresh fish) was enough in itself

Thanks for your feedback. There really are only two settings (vegetable and delicate foods) or (meat or frozen food) on my model. Instruction manuals are readily available from the Tefal website

Living in the UK whitebait is seasonal, summer only. Only alternative is frozen the rest of the year.

Jam roly poly with real custard is a rare treat, and if anyone says they don't have time now, I would respectfully point out that in the 30s/40s/50s/60s etc fire grates had to be emptied, and new fires laid in, washing was by hand and mangle, vacuum cleaners were rare and most cleaning was by broom and brush, but, there was little television to distract and no antisocial media etc. people lived REAL lives, cooked from scratch, grew their own veg and tended gardens year round. I'm not grumbling, just saying that a return to real values and ways of living would be welcome, and parents could involve their children in it too. Thank you for posting this video, and I hope many people do try it. Remember, real custard, and not tinned or out of a carton, and not powdered. Try a proper home made steak and kidney pudding followed by this - you may not need to eat for a long time after, but what a feast.
