This recipe is bomb, we use it so often at home. Most times I cook the meat in my instapot, so that probably won’t be considered souvlaki but it’s still really good for gyros. I hope Akis doesn’t kill me 😂 also, I use spanish olive oil sorry!! 🇪🇸

Hi! I am a bit confused about the syrup. Some says it is very important to let it simmer. Some says for 5 minutes, some for 10 or 15. Some also says it is important to make a ball test. But there are a lot that do as you are showing, just bring to boil. Can you explain? Is it overkill to simmer for this type of syrup? I know it is important for candy (hard candy, soft chewy candy), fudge and so on, but this is "only syrup". P.S. I never got to eat baklava as child, since my mom thought it was "to sugary and yucky" - even though I have greek cousins, visiting them every other year! I will get it now! Eat it every day. Bought, homemade, good, bad, all are better than no baklava!!! One small piece a day wont affect anyone negatively in any way. Just good for mental health. ^_^

It depends on the recipe. With boiling you reduce the water so it has a bigger density of sugar. In this recipe we have measured our ingredients so only it will be easier.

My husband got our two large Pyrex bowls unwedged easily with a small wooden wedge and a small hammer. He turned the bowls on there side vertically and tapped lightly two or three times, he rolled the bowl over to the opposite side and again tapped lightly and it came apart easily. None of the other techniques we found on the internet worked for us. This is a no mess proven method that works every time.
