anyone have a link to a caffeine free version? I always mess things up trying to make my own substitutions. But I would reclesslymremove the espresso, add more of the cocoa powder? only q would be how much?

U freeze the cake while It’s wrapped ? Then leave it out on room temperature? When ready to work with it and decorate ?

@jillianbutler I know I'm quite late to comment here but this is a gem of a recipe. I'm going to try it out this weekend. Just one question though. Does this Ganache recipe (from comments) also hardens or firms up in texture when the cake is refrigerated? If yes, any ideas on how to avoid it or play around with the Cream: Chocolate ratio. I hate buttercream so I don't want to go that route. I love ganache when made fresh but firms up a lot if I refrigerate the cake.

Thanks so much for these tips. I baked a cake a few days ago and decided for the first time to wait till the toothpick came out dry and he cake was definitely too dry. Will look for the springiness instead. And cooking in a regular oven vs convection is brilliant! I think I found the answer for my unfortunate domed cakes.

Do we have to use both upper and lower heating rods on while baking without fan? I read somewhere that only lower rod should be used for baking..snd secondly, do we have to lower the temperature further if we are using both the rods on? Pl reply

Hi Pavi, thanks for watching! When you are baking without the fan you should only have the bottom element on. This way your cake doesn’t get burnt and crispy on top before it’s fully baked. I wouldn’t recommend both top and bottom elements (rods) unless you’re making crispy pastries or breads. Happy baking. J

Perhaps there is an answer lower in the comments, but regarding the broken cake, clever idea but I'd definitely be worried when the cake was ready to be cut. Sitting at room temp (like a birthday party), I would imagine, especially a two layer cake (normal home height) would fall apart in the repaired area, when it was cut. also, the same problem of "crumbling" when you repair the sunken middle. The cake would "look" fine from the outside but be crumbly where it was repaired. Just the thoughts of another cake baker, but not a cake boss! Love your videos.
