I've been doing this dish now twice--both following Andy Ricker's POKPOK cookbook. His doesn't have peanuts in it and he cooks the curry paste first...then adds the pork and shallots to it. I left out the chilis this 2nd time for the sake of my wife, as well as using Jasmine rice rather than sticky rice which she prefers. I can see that the peanuts would be a welcome addition. He also sprinkles a garnish of fried shallots on top at the end.

Gotta love how Thai's can come to Australia, buy a house, start a business, work unrestricted, but you, as an Aussie, try doing the same thing in Thailand, and you'll be in a world of hurt my friend. And 1 more thing, you should have said 'Kup kon na krup, Na is a filler word to make sentences sound more polite, you said 'Mar' and depending on your tone means either 'dog or horse' lol, translation - 'thank you dog', ha ha ha, good job!

This is great, and all, but what if we live in the west and we don't have access to a lot of these very esoteric Asian ingredients? Like that weird flower spiral thing? I would like to see a recipe for a western dish, using Western ingredients, as apple snails are incredibly invasive and destructive in other parts of the world. Apple snails are easy to cook, but I hear they don't taste very good, unless prepared in a certain way. Also, we must be wary of the poisonous eggs, as well as cook them very thoroughly as they carry brain-infecting worm parasites.

I was born in Bangkok and in live in the city for twenty years within twenty years never travel Any ware out in Thailand still learning about them. I believe I knew more about the united States more than the country I was born in. But I'm glad to see the countryside of Thailand still kept the old traditional way of life still.
