Chef- when you used the vinegar to-“open up the spices”- is that universal with ground meat? I ask because I have been perfecting my chicken breakfast sausage recipe since I don’t always find chicken breakfast sausages at the grocery store that I like. Should I add a little distilled vinegar to my breakfast sausage mixture to enhance the flavor?

Greetings! Thanks for the question…you could use vinegar, I would go with apple cider vinegar though and I would caution you not to use too much- or you could simply toast the spices in a pan before adding them- The vinegar in chorizo is to de-nature the protein… you don’t necessarily want your breakfast sausage to have the same texture..

Greetings! It was neither those were agave &Chili roasted Yams - purple and red! The fish was cornmeal dusted Mackarel finished with pomegranate & Serrano sauce
