I learned to cook different meals watching this guy along with Julia Childs and at 71 my daughter in law and granddaughter like to cook with me to learn the same recipes. I was glad to find these clips to show them who he was.

I have this as ambiance and when he said the roux was oike dark chocolate i was likr hold up. Then i saw the protien and was like carrrry on. Seafood is light, beef and pork is medium, and game is dark

Fresh ground pepper is the easiest way to become a better cook. Morton's now sells peppercorns in a good solid grinder they say can be reused 3 times. Wilson is profoundly correct that parsley is a great herb not a garnish. A handful of chopped parsley improves virtually any dish. (If using curly leaf, chop well because the texture can be annoying otherwise.)

My daddy used to have some of Justin Wilson’s records and I would listen to them . I was around 15 years old and I was born in 1962 so that was around 1975. He made me laugh all the time and I loved the way he talked and his jokes were so funny to me. Little did I know that in 1991 on December 23rd that me and my daughter would move to Lake Charles Louisiana with my brother and sister in law for a couple of months until we got our own house and I would fall in love with their culture, food and the Cajun people speaking Cajun!! I absolutely love it!!
