I appreciate it but if you’re going to produce a video about how to make your own fermented ketchup then you should stick to the traditional ingredients of ketchup, if you want to make some funky fun mango ketchup then title your video appropriately.

Thanks for the comment , the video is titled ketchup - which covers what it is Mushroom ketchup dates back over a hundred years- which you could call traditional ? But it’s made with mushrooms This is my recipe which I used in my fish and chip shop and was very popular and wanted to share the recipe . If you don’t want to add the mango replace that weight with more tomato 👍

Thanks , we wired the horse box up and it all led to a chunky power box which is like a massive heavy duty extension lead As we were doing festivals they normally supplied power to plug that into We also had a diesel generator just incase 😃 hope that helps

Im having trouble getting my sauce smooth. I weighed my peppers and added about %25 of that weight in vinegar and some of the brine. I blended it for about 10 minutes in total, and it still came out chunky. It's a nice ninja blender, so im not sure what im doing wrong. Do you have any recommendations?

Is it a wide blender , like a classic blender - a liquidiser or smoothie maker will get it nice and smooth because it designed to blend liquids rather than just chop random stuff up Or a stick blender in a narrow container 😃

You can actually leave the seeds in the chilli peppers if you wanted to.This is because chilli seeds do not contain capsaicin, so they won't add any heat to the sauce.

Really I did a bit of research and it said the heat is in the seeds and the membrane , only what I’ve read those , I’m always open to learning new info 😃

From what I understand, the heat comes from capsaicin, which is in the placenta, the white spongey pith to which the seeds are attached.

Depending on the Glas you use you dont need to Release gas..... from whatvi know you shouldnt even do this...i like a 6 week fermentatiosn for my sauerkraut. Over here in Germany we alsobdont put this on hotdogs, thats torally american. I like it, thats not the point, but we use this to cook it with a Haxe or Eisbein. Or with some Schweinebraten or Bratwürstchen, yummy. I also ad for the fermentaion some bayleaf, kummel and a spice we call Piment (dont know the english term). Its cooked great. Use some ducklard to saute some onions, add the sauerkraut, let it also get some color and then and some water and let it cook for 30-60 minutes.... i am drooling already... 😂😂

I really wish my first job at 16 wasn’t at the 4 star resort restaurant as a waiter. All the chefs there were slobs. Greasy, perverts, unhygienic, bullies. That really put me off ever wanting to work in a kitchen again. I’m sure it’s not all like that.

Do you know roughly the thickness of the chips when they first come out of the chipper? I recently bought a manual chipper that cuts them into 13mm, which seems quite thin to me!

So what is in the powder that is added? is that just a soak step? it's presumably mostly baking soda or sodium carbonate.

It’s called dry white , there are different brands on the market but dry white stops the chips going black once the water has been drained off and removes any cancer forming properties within the Chip - which can be an issue when frying potatoes - so it’s a health and safety step that we take to make the chips safer to eat once fried
