I have not used recent versions of Kubios. I've switched to using the HRV module in ADINSTRUMENTS because I collect my data with ADI. It's just faster. So I cannot say which is better at this point.

About the concept of low intensity exercise and fat burning. If one keeps the level of intensity low enough relative to one´s VO2 max, then one can maintain that level of exercise for longer and don´t burn out fast and therefore be able to burn fat for longer as energy source. Doesn´t that make sense, especially at low level of VO2 max and low LTP? Thank you

Maybe I'm an n = 1, but I'm completely fat-adapted, having not taken in plants or exogenous carbs in over three years. I run 100 miles a week on ruminants, water & salt. My training blocks includes not only low-intensity easy runs but all the way up to high-intensity VO2 max intervals and hill repeats. If your chart is correct, then I'm relying on the demand-driven process of gluconeogenesis to create the endogenous glycogen I need to fuel my max-intensity workouts?

It depends on what you are trying to learn, but typically, it is a spot sample (not 24hr) to determine current hydration status.
