I have been living in Islamabad since last twenty days and literally I agree that its a comfort food and I loved its pulao. Since I am a Karachiet, the quantity is enough for me atleast.

When it comes to food our region is like Silicon Valley of taste & flavors. This is a very non-veg account, so Indian trolls stay away !… tay maghro’N lathoo saadi Kuri day…..Kashmir tumhara, Kashmiri hamaray ! The notable & worth mentioning part of Hindustan’s food culture evolved from Mughal cuisine from late Mughal period-all that Biryani, Qorma, and Nihari. Lucknow Nawabs progressed further in competition with Delhi, and even patented a few items like Sheermaal, Yakhni Pulao (subcontinent’s benchmark version), and pan-fried kebab (Galouti kebab). Hyderabad Nizams being less original than Lucknow and more impressionable may have contributed with their Kachay Gosht ki Biryani (throwing just a banter, not 100% sure about its origins). Old Delhi Jama Masjid & Lucknow HazratGanj still carry that legacy. Post-independence, things went in different ways for both countries. Karachi, owing to immigrant Muhajirs, particularly Delhi walas, inherited those Mughal dishes like Nihari and Biryani and even improved them for humid conditions - aroma over richness of flavor. During the 1960s Dhabas in Indian Punjab & Haryana introduced tandoori, easy to cook, decent in taste, to cater to the palates of lorry drivers. Today all Indian restaurants and wedding feasts have Chicken Tandoori, Dal Makhani, and Butter Chicken. Lahore, being at the crossroads of Delhi and Kabul, has both influences. But it mainly owes a lot to Amritsari Kashmiris, who brought Harissa Paye Karode, etc. NW Frontier gave BBQ & Karahi. Otherwise, Punjabis are supposed to be mainly vegetarians. Still, in many Muslim traditional households, “Wadda Ghost” is considered a source of many ills. I missed out on the Parsi influence on cafés and tea houses in Karachi and Bombay. The atmosphere of even a dilapidated tea house in Karachi is so surreal. The Bombay ones appear to be still kept in pristine condition. One honorable mention is the Bengali influence & its contribution to Mithai culture in Indo-Pak.

He can't even name the dish properly, just sharing my words please don't start war against me. In my restaurant, we focus on every states regional food, like the South has to offer more than idli and dosa also east , north east , Gujarat, Rajasthan, and maharashtra food has completely different preparation, dishes and test

Bilkul sahi. People living near the equator, or the coastal region tend to eat spicier to beat the heat. Eat spicy you sweat and your body cools down. Weird but that's how science works

Garam fridge se nikal ke nahi ki jaati hai kheer. India me kheer banti hai which is hot and that is served. I prefer to keep it in the fridge and enjoy the next day. Never heard ki koi fridge se kheer nikal ke garam kar raha ho.

Lapetna is also folding in Hindi, but colloquially it is also used to refer to when the gravy is not watery. Lapeta, latpat gravy are also used.

In the early 90's vendors on cycle used to sell Idly in many parts of North India and they generally mispronounced Idly as Itly and thus you would see many people still calling it by that name. I am talking about a time when north-south food had not mixed that much as we see today.
