We operate out of a 1mil sqft hotel, no joke. So we use the hotbox to transport to wherever the guest is waiting. It eliminates cooling time while moving from the kitchen to service!

Tbh those “high profile” guests should see how the kitchen looks. Clearly dirty and unclean cutting board. Looks a bit old. Then that pan. Don’t get me started on the pan. Plus it’s crazy that you even use a hot case and I see that you’re probably also using hot wells. This is shit

@@FloppedPizzaParty Yo! Great question. So we have to prep and keep heat on all our meals in some form or fashion because we feed thousands of people a week, if not a day, in a hotel. We aim to keep it around 15min, our personal preference, but do a quick google search for ServSafe's Food Guidelines regarding temperature and food resting periods! They set the standard based off the temp and chemistry behind food bacteria and contamination!
