Ingredients: For the Momo: chicken ground meat Fresh coriander, finely chopped Ginger paste Spring onions, finely chopped Red onions, finely chopped Salt to taste For the Sauce: 3-4 tomatoes, sliced Red chilies (adjust according to spice preference) Fresh coriander Salt to taste Few drops of lemon juice For the Chicken Broth: Chicken bones and remaining meat Vegetables: leek, carrots, parsley roots Spices: cardamom, cloves, bay leaves Water Instructions: Chicken Broth: In a large pot, combine chicken bones, remaining meat, vegetables, and spices. Cover with water and bring to a boil. Simmer for about an hour, allowing the flavors to infuse. Momo Filling: In a mixing bowl, combine chicken ground meat, finely chopped coriander, ginger paste, spring onions, red onions, and salt. Mix thoroughly until well combined . Momo Sauce: In a pan, combine sliced tomatoes and red chilies. Boil for 10 minutes. Transfer to a blender, add fresh coriander, salt, and blend until smooth. Add a few drops of lemon juice and mix well. Shaping and Cooking Momos: Take a momo wrapper and place a spoonful of the chicken mixture in the center. Fold and shape the momos as desired. Steam the momos for about 12 minutes or until the wrappers are cooked. Enjoy your delicious Darjeeling Style Chicken Momos with the flavorful sauce and comforting chicken broth!

dahi and puffed rice ..its not raw rice.. we use puffed rice
