That's a great question! Before refrigeration, beer was kept cool in caves and cellars to manage fermentation. Wooden barrels were key for fermenting and aging, affecting flavor and quality. Wild yeast was a big factor, often leading to unpredictable results, but over time, brewers figured out how to manage and cultivate specific strains for more consistent outcomes🍻

Why are 95% of craft beers hevily hopped IPA's. All the same. Fruity, citrusy flavor. I prefer real beer. Oldskool english ales. Bitters and stuff
