You should re-edit your video so that you don't duplicate the first 7 minutes and don't present the rest of the process out of sequence. Weird.

Too much Lime and too much washing. 1 to 1 1/2% lime to corn and rinse but don't agitate - keep at least 50% of the skins and grind them along with the kernels. in Oaxaca they rinse all the lime away, in most other parts of Mexico they like a little lime in the Masa. Over working the grain while rinsing makes for weak tortillas that cannot be turned after only 30 seconds, first side.

This is so informative. You’ve spent a lot of time learning this and what you’ve packed in here is not only comprehensive but also invaluable. Thank you for doing this work. Too bad you’re not single. Ha. I would like to watch this again and again taking notes, the practice myself then use it so I can make a demonstration with teenaged girls at church church and at the inner city mission where I volunteer with young ladies. What I appreciate is just how much info you’ve included here for me ti do that in one video. Typically when I go to share fermenting or sour dough making or grain milling or pasta making with these girls it takes so much time collecting books and watching countless videos ti get ready. So that you. You saved me not only time which I seem to have less of as I age but also money. Thank you.

You need to edit this video. You have the same clip twice of you pouring the quart of dent corn to be rinsed into your iron pan.

thank you sooo much! i'm asian and i LOVE making tamales! i wanted to learn how to make masa tamales from scratch so i could experiment with different corn flavors!! couldn't find a video anywhere!! also loved that your video had science and history facts!! people should learn these old ways... too much reliance on prepackaged everything.

Ps...put a bunch on the hopper and work it into the hole...instead of a handful down the hole it’ll go faster and keep from working with a hot grinder

To get the rest of your corn out through the grinding plate use 3 to four ice cubes at the end of the grind. I just made my first batch of tamales from scratch and I used hominy in the 5 pound can already processed I believe it was old hicory corn as the kernels were as big as chi peas. I had to add only about a quarter cup of water before makjng my masa.

The Aztecs and really all North American Natives used calcium hydroxide (lime) or ashes which have alkaline. I don’t know about South America, because Venezuelan arepas don’t use it.

Even the word nixtamal, the process of cooking corn in calcium hydroxice, comes from the Nahuatl, the ancient language of the Aztec. Furthermore, corn is native to Mexico where it was also domesticated over 9,000 years ago. This guy keeps crediting the Inca for the process of nixtamalization.

The corn was not cooked as it should be, the screen he used was too fine and a meat grinder, electric or manual is not the right grinder for tortilla o tamales masa. the idea is to obtain a white masa with very fine texture. Other than that it is a nice video.

nixtamal is not supposed to be cooked, just a very light simmer for a few minutes, then soak overnight without heat... if you cook it in the water and lye then you have pozole (hominy) and not nixtamal, texture looked good enough for tamales without having to use a shitty corona mill which are small, annoying to use, crappy clamp system, and you still have to do more than one pass with them. he used yellow dent corn, so the flour was yellow, if you want white simply use white corn instead... but not many white varieties suitable for dough are readily available in the US.

Such a thorough demonstration of the process, but why would you cut the video together out of sequence? Repeating the first 4 minutes of the video. So much opportunity for success here.

hola vivo en México y ud hizo la tecnica d nixtamalizado muy bien. gracias a la tortilla y a la cal q se le agrega los niños en mexico no tienen sus pies chuecos ya q aporta el calcio necesario. lo felicito lo unico q yo haria no enjuagar mucho cuando esta cocido ya q le quita la cal absorvida solo un enjuague rapido y ya felicitaciones .

I am a Mexican anthropologist cook. The process was discovered in Mesoamerica (Mexico) NOT by the Incas as you suggest.

You can pick up a Corona corn mill for about $20. 40 years ago, every house in rural Mexico had a wooden bench with a Corona mill mounted on it, and a flat stone and stone sestal for the final grind. In dry areas, it was common for the chickens to do the clean up, to save water.

Polenta is not nixtamalized. Polenta is made from simple corn meal.

There is grits and hominy grits. Polenta is no different in that you can make it with nixtamalized corn or not. But its better for you nixtamalized.

Is your machine able to grind wheat? My kitchen aid mixer, with the wheat attachment, fell apart after a couple of weeks of grinding (2-3 grinds a week) wheat. A machine that can do only one thing is not good.
