Old school lessons from old school guy. Good lesson for the new folks. Everyone must learn. I was fortunate enough to teach my kids and then they taught their kids. Remember folks, everyone has a first time and must be taught.

Not the way I do it in Louisiana. But nothing wrong with that. But be careful with buying the packs of crawfish tails. Read the pack. You don’t want the Chinese crawfish. Gotta look close where they are from. They try an be slick with the packaging sometimes. The Chinese crawfish isn’t the same. Well it’s just not like Louisiana crawfish. A like he was saying some brands have an orange\yellowish liquid in with it. That’s the fats/flavor. Just an all around better pack. If their to clean a you didn’t see to much of it. Least I noticed. They seem to be more likely a Chinese crawfish meat pack. Just do yaself a favor. Avoid the Chinese ones.

Want to know a restaurant Secret about Chicken Salad? Some restaurants use turkey they just chop it up fine and mix the ingredients together. Nobody had ever said it tasted like Turkey? The owner Said Chicken was to expensive so he used the big bird meat instead. IDK if this is a widespread thing? But it was how the Charcoal Drive In did it in Allentown PA. (Permanently closed due to the road being moved 😮 ) It was popular Former president Clinton ate there it was chaos a unexpected stop and the secret Service in our kitchen watching everyone.
