OMG ... That looks amazing and sounds so crunchy. I'd love to recreate that. I presume that was a longer bake at a lower temp? I'd appreciate any recommendations on managing the time/temp on the Karu 16 for that style. Thanks for this video.

Thank you so much! Full power until the stone reaches 430°C. Launch the pizza and turn it almost to the lowest flame and rotate the pizza until all edges are crusty.

RECIPE - Wholegrain Sourdough Pita Bread 💣 This recipe is suitable for 'same day' bake at 25°C/77F 🥙💨 8×1 pita (110g each) 300g water 350 tipo 00 wheat flour 100g wholegrain flour 80g sourdough starter/levain 25g greek youghurt (optional) 13g extra virgin olive oil 12g salt (If you skip the youghurt you can add 10g extra water and 15g of extra flour of your choice) Mix water, all the flours and starter together until combined (fermentolyse). Let it rest covered for 30 minutes. Add youghurt, olive oil and salt and mix for 10 minutes. Let is rest covered for 30 minutes and perform a few coil folds (see my highlights). Do 3 more coil folds for every 30-45 minutes and let the dough rest a couple of hours until it has increase about 50%. Devide the dough into 110g doughballs. Shape them like I do in this video. Cover the balls and let them proof for 2-3 hours until they have increase about 30%. Preheat a baking stone/steel for about 45 minutes at 275°C/527F. Use a mix of tipo 00 flour and semolina and rool the balls like a thick pizza (0,5 cm?). Turn the oven to 250°C/482F (fan on) and place 4 pitas on the baking stone. Bake for 6-8 minutes and watch the magic happen. Take them out when the crust is golden and bake the last 4 pitas. Cover the pitas with a cloth until you cut them open for your favorite stuffing. You can also use any kinds of left overs. Pitas taste great with all kinds of stuffing 😉 Falafels, humus, salad, chicken... You can freeze the pitas in a plastic bag when completely cooled for up to 3 months. Easier to get a cheap hand held steam cleaner. And a short 1/8th stainless steel tube. A close the oven door on the steel rod. A use the little steam cleaner and blast steam through the tube into the oven.
