My maternal grandfather was a man who worked construction until he no longer could work, using a shovel and obviously his physical strength. He was a muscular man. But super big, but for a man of about 5'8" inch tall and about 175lb is was muscular. Besides what he did for a living I never saw him eating the trash food most people eat today.

I might gotta drop the weight and up the reps until it hurts instead of going up in weight and only going until I can do one

Yeah you’ll get much better gains doing higher reps. A lot of people do great with 1 top set around 8-12 reps then take off some weight and fail around 15-20. Then move on to something else.
