works with any fish, I did this when I was a kid gutting perch.

I would avoid harvesting the females if possible but it’s not illegal so I don’t want to judge.

I learned this when I was around 5-6 years old maybe younger. After you have done this a bunch of times you can feel the side of the fish and feel the eggs bulge.

In Germany it's illegal catch trout when they are spawning. In general, I would advise you to try and check if they have eggs and if yes, then release it. That is so long as they aren't a ecological problem as in being invasive to other species of trout etc.
