Hi! Refrigerated is better, and if you want to store them in the freezer, follow the following steps: Cover bars tightly, as a whole or cut into individual squares, and freeze for up to 3 months. I simply line the squares in a freezer-friendly container between sheets of parchment paper. Thaw overnight in the refrigerator before serving.

Lo Zuccotto Fiorentino pare sia stato inventato da Bernardo Buontalenti, lo stesso Buontalenti che inventò il gelato, in onore della Regina Caterina de' Medici. Gli fu dato il nome di "Elmo di Caterina" perché il primo Zuccotto fu realizzato utilizzando come stampo un piccolo elmo, proveniente dall'esercito fiorentino. Lo Zuccotto Toscano, o Zuccotto Fiorentino, è un dolce amatissimo a Firenze, con i suoi tanti strati conquisterà e sorprenderà davvero tutti! La ricetta originale dello Zuccotto prevede l'utilizzo di ingredienti semplici come pan di spagna, ricotta, cacao, ciliegie o frutta candita, gocce di cioccolato e l'Alchermes, uno squisito e aromatico liquore toscano. La parte più famosa è sicuramente il gelato allo Zuccotto, che viene farcito con gelato artigianale, ma ci sono anche vari modi per realizzare la fascia: in alternativa al pan di spagna potete utilizzare i savoiardi. La ricetta che utilizzo io è quella classica uno, ma potete provare a cambiarlo realizzandolo con il pandoro o con il gelato. I saw these in Dinner Club, the Italian show that runs on Amazon Prime, and really wanted to try them. Tried the recipe tonight and they turned out great. It was very helpful to show slowly how to do the folds. I made an Albanian sauce for the topping, fërgesë, which is also great for “fare la scarpata”. Now we’re full and bloated but happy.
